Yams for those who don’t like ‘em candied!
Ingredients:
2 large sweet potatoes (yams)
2 Tbs. olive oil (or cooking oil of your choice)
1 tsp. garlic powder
1 tsp. cajun seasoning
dash salt
dash pepper
1/2 cup ketchup
1/2 cup mayo
1 tsp. fresh lime juice
Procedure:
1. Preheat oven to 375 degrees.
2. Wash sweet potatoes and cut into steak-fry sized pieces. (If you’re having trouble cutting raw yams, poke with fork and microwave for 4 minutes and try again.)
3. Mix oil and spices in bowl.
4. Toss potato pieces in oil and spices and spread on baking tray.
5. Cook sticks for 15-20 minutes or until tender, but not soft.
While cooking, mix ketchup, mayo and fresh lime juice in bowl for dipping sauce.
